Advanced Cheesemaking
July 16 - July 17
Attendees will spend 2 days at CalPoly, San Luis Obispo CA, receiving instruction on fundamentals of milk, an overview of packaging options for specialty cheeses. Attendees will spend 1.5 days having hands-on experience in the CalPoly creamery for the practical manufacture of farmer’s cheeses, Gouda, Parmesan, & and an overview of other global cheeses.
