A full-day workshop structured to provide an overview of the basic concepts of the food safety plan: preliminary documentation, hazard analysis, and preventive controls (process, allergen, sanitation, and supply chain). Experts will provide one-on-one coaching to help you develop the necessary documentation for each of those areas. The coaches all have Preventive Control Qualified Individual (PCQI) experience, and are on hand to answer questions and to help you deep dive into your food safety plan. Templates (digital and paper) will be provided to facilitate plan development, but attendees are strongly encouraged to bring along their current or in-progress plans. Cheese3 Talks…as in Cheese (cubed): Cheese, Creativity, Community. These short, focused sessions kick off the ACS Conference, and put cheese industry thinkers front and center to share, teach, and inspire the cheese community.

Opportunities to connect and network with industry colleagues organized by theme. These are facilitated discussions.
Tasting sessions are optional and take place during concurrent session blocks. All tasting sessions require a ticket, distributed on-site for admission. Tickets will be available outside of the session room 30 minutes prior to the session start time. Limit one ticket per person. Doors will close at the start of the session and late entry will not be permitted.
How Sweet Are You? The Science of Taste
Dive deep into the elements of sensory evaluation to gauge your threshold for the five tastes on the tongue and to gain a better understanding of your palate. Join sensory expert Russell Smith to find out just how differently we all experience flavors. But, before you can understand the flavors in food, you need to understand your palate. This session is ticketed, and treated like a tasting session without the cheese. The session will be held 3 times during conference, and the capacity is limited to 15 participants per session. There is an additional fee of $25.

The Cheeseletes 5K
The Cheeseletes 5K launched during the ACS 2016 Conference in Des Moines, Iowa to raise funds for the Daphne Zepos Teaching Award (DZTA) and American Cheese Education Foundation (ACEF). Friends who share a passion for cheese, education, and a good time came together and raised over $8,000. Each year the 5K selects a different set of nonprofit organizations for which to raise funds in the hopes of increasing educational opportunities for the growing number of cheese professionals in our industry.
