A full-day workshop structured to provide an overview of the basic concepts of the food safety plan: preliminary documentation, hazard analysis, and preventive controls (process, allergen, sanitation, and supply chain). Experts will provide one-on-one coaching to help you develop the necessary documentation for each of those areas. The coaches all have Preventive Control Qualified Individual (PCQI) experience, and are on hand to answer questions and to help you deep dive into your food safety plan. Templates (digital and paper) will be provided to facilitate plan development, but attendees are strongly encouraged to bring along their current or in-progress plans. Open Networking Sessions
Opportunities to connect and network with industry colleagues organized by theme. These are facilitated discussions.
Tasting sessions are optional and take place during concurrent session blocks. All tasting sessions require a ticket, distributed on-site for admission. Tickets will be available outside of the session room 30 minutes prior to the session start time. Limit one ticket per person. Doors will close at the start of the session and late entry will not be permitted.
How Sweet Are You? The Science of Taste
Before you can understand the flavors in food, you need to understand your palate. Join sensory expert Russell Smith to find out just how differently we all experience flavors. Your threshold for tastes on the tongue will be tested, as well as your ability to discriminate between the flavors of very similar cheeses. This session is ticketed, and treated like a tasting session. The session will be held 3 times during conference, and the capacity is limited to 15 participants per session. There is an additional fee of $25.

Are you an author of a cheese-related book? We welcome you to submit a request to have your publication considered for our Conference Bookstore. Requests must be received by May 31st. Please fill out our Conference Bookstore and Author Book Signing Request Form if you are interested in selling your book at this year’s conference, or are interested in participating in a book signing. Please note that ACS give priority to our conference speakers to participate in book signings.

The Expert is In!
Are you an expert in your field? Have you helped others navigate their business questions through consultation? These free one-on-one 30-minute consultation sessions give our members an opportunity to connect with you, our experts in the industry, on various topics ranging from business strategy, to HR, to food safety and cheese quality questions.
Here’s how it works: Conference attendees can sign up for one-on-one 30-minute meetings with you, the industry expert. Registration will be in advance, and participants will be encouraged to come to you with specific questions or topics in mind.
You, the expert, will have a chance to connect with three different industry professionals during your allocated 90-minute time block. This is a great opportunity to volunteer your time and give back to the industry by sharing your knowledge and expertise with others, while also developing new relationships and potential mentees.
