Meet the Cheesemaker

    Meet the Cheesemaker enables producers of cheese and cultured dairy products to meet with and sample products to hundreds of key industry distributors, retailers, buyers, and food writers from throughout North America.

    76 producers participated in Meet the Cheesemaker at the 2013 ACS Conference in Madison, WI and we expect even greater participation this summer in Sacramento, CA!

    When: Wednesday, July 30, 2014 | 3:45 PM – 6:00 PM
    Where: Sacramento Convention Center
    Registration Fee: $185 through June 25 (fee increases to $225 from June 26-July 3)

    Guidelines & Materials for Participants:

    ACS encourages participants to showcase products and distribute company information. A limit of 6 (six) products will be allowed for each company. ACS will provide participants with the following:

    • 6’ table with cloth
    • Pitcher of water and cups
    • Napkins
    • Trays
    • Gloves
    • Toothpicks
    • Basket of crackers or bread
    • Knife (1)
    • Cutting Board (1 flexible)

    ACS will also provide cheesemakers with refrigerated storage space for this event. However, ACS is not able to offer kitchen preparation space. We ask that participants prepare their products in advance, or at their table.

    Participants Should Provide:

    • Registration fee
    • Cheese(s) and/or cultured dairy products. A limit of 6 products will be allowed for each participant.  (Since the event lasts from 3:45 p.m. – 6:00 p.m., participants can expect a flow of attendance throughout those hours.)
    • Company literature and/or display items.
    • Proper labeling and shipment of product(s) prior to the event.  Shipping instructions and labels will be provided prior to the event.

    2014 Meet the Cheesemaker Registration

    • Please Note: The company representative must be a cheesemaker or a direct representative of the company.
    • As a participating company, you must be a current ACS member in good standing.

    • The American Cheese Society (ACS) values food safety, and we believe that our members craft the most wholesome, delicious, and safe cheeses around. Given the Food & Drug Administration’s (FDA) growing scrutiny of food safety, and ACS’s role as an industry leader, we strive to ensure that our members are ahead of the curve on any regulatory changes. We encourage our members to adhere to the best practices and highest standards of cheesemaking.

      To that end, all Meet the Cheesemaker participating companies are required to have practices and procedures in place to ensure that their products fall within the current pathogen levels regulated by the FDA Compliance Program for Foodborne Biological Hazards (Domestic and Imported Cheese and Cheese Products) as follows:

      Products must be free of:

      • Listeria monocytogenes
      • Salmonella
      • Enterohemorrhagic Escherichia coli (EHEC), including O157:H7

      Additionally, the following must be met :

      • Escherichia coli (E. coli): not to exceed 1x104 CFU/gram
      • Enterotoxigenic Escherichia coli (ETEC): not to exceed 1x103CFU/gram
      • Staphylococcus aureus: not to exceed 104 or greater CFU/gram; toxin test must be negative
