  1. Preheat the oven to 425 degrees.
  2. Remove the greens from the radishes and wash the radishes thoroughly.
  3. Rinse the cherry tomatoes and set aside.
  4. Cut the radishes into quarters.
  5. Crumble the queso fresco and set aside.
  6. Drizzle the bottom of a roasting pan with half of the olive oil and add the cut radishes and whole cherry tomatoes to the pan. Drizzle the remaining olive oil over the vegetables and toss to combine.
  7. Season with the coarse sea salt, fresh ground black pepper, and dried tarragon.
  8. Roast in the oven for 35-40 minutes, stirring once at the halfway mark.
  9. Season with a few fresh sprigs of tarragon and the crumbled queso fresco and enjoy.
