Holiday Cheddar Cookies
The cookies can last up to two weeks, but make sure to eat at least one fresh out of the oven while they are still warm!

Instructions
  1. Grate the cheddar cheese.
  2. Combine the butter, grated cheddar, flour, and sea salt and knead them together until you form a large ball of dough.
  3. Wrap the dough in wax paper and let set in the refrigerator overnight.
  4. Preheat your oven to 350 degrees.
  5. Using a spoon, pull off pieces of the dough and roll them into small balls (about 2 tablespoons in size) with your hands.
  6. Set the dough balls on two unlined and ungreased cookie sheets.
  7. Press each ball down gently with the end of a fork, creating a criss-cross pattern with the tines.
  8. Bake until the bottom of the cookies are golden brown and the tops are pale brown, about 20 – 22 minutes.
  9. Sprinkle all or half of your warm, baked cookies with cayenne pepper, depending on your spice tolerance.
  10. Let cool and store in a cookie tin.
