Leigh Friend, Casellula Cheese & Wine Café

Pastry Chef, Leigh Friend, studied at The New England Culinary Institute and worked at restaurants across the country before arriving at Casellula Cheese and Wine Café in New York City. She has created unique wedding cakes in Palm Springs and worked in fine-dining establishments in Boston and New York, including famed restaurant Gramercy Tavern. Leigh’s desserts, which include modern takes on seasonal American classics, are well-known and highly reviewed by fellow restaurateurs and publications. Her original hazelnut goat cheese truffles, a Casellula calassic, are currently an integral part of the NYC-based immersive theater experience “Then She Fell.” In addition to a full menu of desserts, she creates over 30 accompaniments weekly to enhance the cheese pairing experience beyond traditional components. Some of these accompaniments include spicy curry peanut brittle as well as sweet and sour pineapple and bacon jam. Leigh loves creating new flavors for New York’s passionate cheese lovers. She currently lives in Brooklyn, NY.
