Katie began her career in the cheese industry in 2012, bringing leadership and inventory-management experience to the role of Cheese Buyer at a Whole Foods Market in Austin, Texas. The role inspired her to learn more about the products she sold, as well as engaging in the education of others. She learned the power that cheesemongers have to impact the industry: “You have this incredible privilege to represent the voice of all the people who worked to get that product in the case.”
During that time, she spent a summer at Quicke’s Traditional Ltd, learning about British cheeses as well as visiting many farms, cheesemakers, and distributors in England and France, including mongering behind the counter at Neals Yard Dairy. The welcoming and impressive world of cheesemakers inspired her to work for a production company in the States.
Jasper Hill Farm welcomed Katie in 2015, where the wide variety of cheese types provided an extraordinary opportunity to learn about affinage. After a year in the vaults, she transitioned into the Shipping Department. Now, she leads a team of men and women who hand-wrap cheese, cut and wrap wedges, as well as fulfill Mail Order and Direct Sales orders. One of her biggest contributions to Jasper Hill has been improving efficiency systems and creating a systematic approach to how logistics and labor are utilized to meet the demand of the workload. “I’m honored to contribute to a community that cherishes its people, animals and land.”
