    From Saucisson Sec to all natural pork-free truffle mousse,  Fabrique Délices, a traditional French charcuterie company in Hayward, California, has been preparing time-honored classics alongside innovative new products for over 30 years. With an extensive product line that includes blood sausage, duck confit and country pâtés, Fabrique Délices produces over 3,000 pounds a day. “We’re still traditional, artisanal,” said Sebastien Espinasse, vice president of sales and marketing. “We have some equipment to grind and mix ingredients but then everything is made by hand.”

    La Quercia Cured Meats

    Herb and Kathy Eckhouse started La Quercia with the goal of making uniquely delicious cured meats from humanely raised American pork. Though their appreciation of fine cured meats was sparked by several years in Parma, Italy, it was the bounty of their home region that inspired them to start curing meats in their Des Moines basement. They were captivated from day one! A decade later, the Eckhouses and their team salt, turn, and trim each piece by hand at their aging rooms in Norwalk, Iowa.

    Widmers Washed Rind Brick-72 dpi

    Widmer Washed Rind Brick Cheese

    Brick was invented in 1877 in Wisconsin and is among America’s first washed rind cheeses. Brick has a heady aroma and modestly full flavor that will almost assuredly please any washed rind cheese lover’s taste buds. Third-generation cheesemaker Joe Widmer still uses the same bricks his grandfather bought in 1922 to weigh down the cheese. Each cheese is hand turned three times the first day. After pressing, the cheeses are placed in a salt brine and then moved to a 60-degree curing room where the bacteria do their magic. The cheese is washed for 7-10 days with a bacterial solution before being packaged in foil for further ripening.
