More than four years ago, Dave Eagle (Eagle Mountain Farmhouse Cheese Co.) traveled to Vermont to participate in one of Three Shepherd’s three-day cheese making courses. He returned to Granbury, Texas, established a state of the art cheese facility, and now one may find Eagle Mountain’s excellent cheeses in upscale food markets and restaurants throughout Texas. Eagle Mountain Farmhouse Cheese Co. is known for its fine hand-made cheeses, one of which, “Birdville Reserve”, won first place at the American Cheese Society’s annual Judging & Competition held in Montreal, Canada in August 2011.
Eagle Mountain Farmhouse Cheese Company is pleased to announce that, due to popular demand, we will once again team up with Larry and Linda Faillace of Vermont’s Three Shepherds Cheese for two three-day cheese-making workshops. The workshops will be held on November 8-10, 2013 and November 15-17, 2013, respectively, at Eagle Mountain Farmhouse Cheese Company’s cheese facility in Granbury, Texas.
Cheese making classes at Eagle Mountain’s facility in Texas are ideal for anyone interested in cheese–whether it be the appreciation of delicious artisan cheeses, making handmade cheeses at home for family and friends, or having a business dedicated to the making and/or selling of quality cheeses.
Each cheese making course focuses on the principles of cheese making with a hands-on approach. During the three days, you will make at least seven different cheeses representing the various techniques used to create quality artisan cheeses. By following these principles, you will have the ability to make any cheese with a little practice. We find that the cheese making course dramatically shortens the learning curve and students are able to make quality cheeses very quickly. Please let us know if you would like to attend this fun-filled course as each class is limited to 10 students and is on a first-come first-serve basis. Each class is $550 per person and includes lunch each day (including an extensive cheese and wine tasting event), all materials, including the Three Shepherds Cheese Making Manual and a Texas farmstead dinner.
The three-day beginner and specialty cheese classes are priced at $550 per person and include:

• Cheese tastings, wine pairings, and demonstrations of the versatility of cheese in cooking that will further expand your cheese knowledge.
