Charlie Kalish is co-founder of TWC Consulting (TWC), a food safety consulting firm that specializes in the development of HACCP/HARPC plans for small- to medium-sized food businesses. From 2011 to 2012, Charlie worked as an apprentice cheesemaker and affineur in France and the USA. Companies Charlie trained with include: Mons Fromager et Affineur (FR), Paul Dischamp (FR), Fromagerie Jousseaume (FR), and Cellars of Jasper Hill (VT). Shortly after his return to the U.S., Charlie obtained advanced HACCP training and formed TWC with his twin brother and business partner, Michael Kalish. Charlie’s focus at TWC is the integration of cloud technologies with HACCP principles to eliminate “binder-centric” compliance and streamline digital recordkeeping and record storage.
